Super Healthy Super Bowl snack

Stuffed mini peppers are an awesome and healthy snack or appetizer for the Super Bowl or any special occasion.

Ingredients:

At least 1 dozen mini peppers.

(For larger portions, about a half dozen bell peppers. At least double below ingredients.)

3-4 avocados 1/2 cup yogurt

Organic corn, slightly heated if frozen. (Alternatively try black beans.)

Homemade salsa (diced tomatoes or tomatillos, onions, garlic, cilantro, cumin, jalapeno)

1 cup organic Mexican cheese

2 tsp cilantro

1 tsp onion salt

1 tsp cinnamon

1 tsp garlic powder

Directions:

Blend homemade salsa ingredients in a food processor.

In a large bowl mix all ingredients.

Cut out the juju from peppers.

Stuff with yummy filling.

Broil 4 minutes. (For large peppers, roast about 25 minutes at 400 degrees , broil last 4-5 min.)
